Barista Program (Basic)

Duration: 4 weeks
Schedule: 3 days a week, 2 hours per day
Location: 7AM Roastery, Belgrade

Whether you're a home barista, a coffee enthusiast beginning your journey, or a café owner looking to upskill your team, this course is designed to build a solid foundation in specialty coffee.

What you'll learn:

  • Coffee origins & characteristics – an introduction to where coffee comes from and what to expect in the cup.
  • Tasting & extraction – exploring different origins and flavor profiles, and learning the basics of dialing in (grind size, dosing, tamping, temperature, extraction time, and output).
  • Equipment & maintenance – getting familiar with espresso machines and learning how to take care of them.
  • Milk beverages – understanding the role of lactose in flavor and texture, practicing proper frothing techniques, and creating smooth, balanced drinks with ideal temperature and viscosity.
  • Hands-on practice – pulling your own espresso shots, testing milk texture, and putting it all together in real-world drink preparation.

Barista to Roaster Program (Intermediate)

Duration: 3 weeks
Schedule: 3 days a week, 2 hours per day 
Location: 7AM Roastery, Belgrade

Designed for experienced baristas ready to take the next step in their coffee journey, this program is ideal for professionals looking to become roasters or open a roastery of their own.

What you'll learn:

  • Roast profiling through taste – exploring roast development (underdeveloped, developed, overdeveloped) and building your sensory vocabulary.
  • Cupping fundamentals – how to cup coffee properly and organize a cupping session.
  • Roaster maintenance – understanding your machine inside out: bean and air probes, airflow, cleaning, and safe operation.
  • Introduction to “beanology” – learning how origin, variety, altitude, and harvest data inform roasting decisions.
  • Roasting equipment & calibration – understanding key variables like drum speed (RPM), airflow, gas pressure and power, and batch size.
  • Roasting foundations – warm-up procedures, planning a roast day, BBP (between-batch protocol), identifying first crack, and basic roast curves.
  • Hands-on roasting – 10–15 hours of guided roasting time using our green coffee (optional: bring your own beans to test and roast).

This course is taught on the Bullet R1 Roaster and includes both theory and applied practice.

Professional Roaster Program (Advanced)

Duration: 3 weeks
Schedule: 3 days a week, 2 hours per day
Location: 7AM Roastery, Belgrade

This program is built for experienced roasters looking to refine their skills, expand their sensory toolkit, and deepen their understanding of roasting science and quality control.

What you'll learn:

  • Blind cupping & sensory calibration – establishing your sensory baseline through blind tastings.
  • Coffee varieties & altitude – how genetics and growing conditions influence roasting behavior and cup quality.
  • Quality control tools – tracking roast consistency through weight loss, bean color, moisture readings, roast curves, and cupping.
  • Color analysis – evaluating roasted whole and ground beans using the Agtron scale (0–150), and understanding color’s role in roast development.
  • Moisture content analysis – learning how moisture percentage affects roast behavior and flavor.
  • Roast curve analysis – a deeper dive into how variables like temperature, airflow, and drum speed affect the Rate of Rise (RoR).
  • Open Q&A session – get feedback and advice tailored to your roasting machine, goals, or workflow.
  • Hands-on roasting – 10–15 hours of practical time using our green coffee (optional: bring your own beans for testing and fine-tuning).

This course is taught on the Bullet R1 Roaster and includes both theory and applied practice.
